With Ofsted requiring ever increasing standards within schools, it is vital that your kitchen is all clean and up to scratch. Although there is no specific area’s for kitchen cleaning regulations within Ofsted inspections, there is a chance it shall still be looked at.

The food standards agency and other government bodies outline simple regulations regarding the type of extraction and kitchen cleaning required. If your schools kitchen is used once a day for fewer than 20 pupils you would want your extraction system fully cleaned at least once every 6 months. If your kitchen is used multiple times and is used quite heavily for a lot of pupils, once every 3 months is the best frequency.

The reason your schools kitchen extraction system should be cleaned regularly is to uphold the minimum requirements for its operation ability. The more grease that builds up within the system the more it losses operation ability.

The other main risk is the fire safety. As a school you have a responsibility to protect all your pupils from harm. So it would be within your best interest to avoid all potential fire hazards. A unclean and greased up extraction system can spread fire through the while system in an instant due to the grease providing fuel for the fire. Have a clean system would prevent a fire spreading quickly through your system and creating a serious fire.

The actual kitchen working space its self also needs to be cleaned to a high standard to allow for sufficient hygiene. All spaces should in theory be cleaned after cooking however deep cleans should be regularly carried out to en-sure maximum cleanliness.
